Zucchini
The healthy, vegetarian movement created zoodles and zucchini chocolate cakes, and we're so thankful for this as the world now knows how versatile this squash is.
We'll never tire of a simple zucchini slice or boiled zucchini sautéed in butter, but we know it's best eaten raw. Zucchini is rich in vitamins, minerals, and plant compounds. It may offer several health benefits, ranging from improved digestion to a lower risk of heart disease.

- Good for kids! It's a master of disguise and soaks up other flavours. Slice, grate, ribbon and add it to main dishes, slow-cooked meals, salads, sauces, patties, baked goods like slices and cakes.

Store in perforated bag in the vegie crisper of the fridge for up to 12 days. Don't wash until you're ready to eat it as moisture can spoil it.
Did you know? It is really it's a fruit (but treated as a vegie in cooking).
