Peas, Snow Pea
Love me tender, love me sweet, never let me go, you have made my life complete,
And, I love you so!
Elvis says it perfectly. These are tender, sweet, crisp with a flatter pod and smaller seeds than most peas, and they make our salads and sandwiches complete. Often the peas inside are not mature.
Snow peas are members of the legume family, just like sugar snaps. They can be subbed with snap peas, as their flavours are quite similar (but sugar peas = sweeter).
- Freshest in spring to winter. March to late August.
- Good for stir fry, salads, main vegie dishes, stir fry and fried rice.
- Store in fridge up to one week (sugars convert to starch over time) in vegie bags. Rinse just before consuming. Freeze for months after blanching (in hot water for one minute and then iced water for 3 minutes) and drying with a paper towel before placing in a freezer bag.
