Another antioxidant friend! Beans are also rich in phytochemicals, and bring fiber, folate and vitamin C (and memories of nice dinners with friends...who doesn't love a Chinese-style green bean?).
Beans are versatile as they take on flavour well.
Look for beans that are a bright green and snap easily.
Top Tip: Green beans spoil quickly in the fridge. Blanch the beans before freezing in jars or plastic for up to 8 months.
- Freshest in summer.
- Good for dips (raw), side dishes, steamed or fried. (note the pods of these green beans can be eaten but other beans like broad beans are usually shelled).
- Store in fridge crisper for 4 days (unwashed)...they spoil quickly in the fridge. You may blanche the beans before freezing in jars or plastic for up to 8 months.

Cook them quickly to keep the nutrition in (keep crunchy).
