Capsicum, Red Large
- Freshest in summer and autumn, but avail all year round.
- Good for school snacks, salads and dippers (raw), or try stuffing, BBQing, grilling, roasting, charring them or adding in sauces, stews, soups, and slow-cooked meals.
- Store in fridge crisper, unwashed, and in a bag with holes or naked for ~5 days. You can freeze chopped capsicum for months.
Did you know?
All capsicums start off green and change colour as they mature (I guess our hair does this). Yellow or red are fully mature capsicums. They are sweeter without the bitter aftertaste of the green cap. For capsicum, the colour change is caused by the breakdown of chlorophyll.
Capsicums belong to the Solanaceae, or nightshade, family which includes potatoes, tomatoes and eggplants.
After grilling the capsicum skins to a black char, pop them in a bag and leave them to rest for 10 mins. Ta dah! The skins will basically fall off.
